“Crawfish, or Crayfish is a name of various crustaceous animals, the common crawfish being the river lobster. It lurks under stones or in holes in the banks. Its food consists of small mollusks or fishes, the larvæ of insects, and almost any sort of animal matter. Some crawfish by their burrowing habits injure mill-dams and the levees of the Mississippi."—(Charles Leonard-Stuart, 1911)
